Indian style Baked Chicken

"Nothing tastes as good as being thin feels." How true is this. At least to me it makes lots of sense. Not to boast there were days when my friends said I physically resembled Actress Simran,  not pretty wise thou ;-) But today, when I look at myself in the mirror I have grown 6 dress size which is terrible. Thanks to Hypothyrodism and Lack of exercise. Though TH says I still have some of those charm left, I know I will lose them all if I don't take any preventive actions immediately.
I enrolled into a neighborhood gym to burn those extra pounds and even registered for a Personal training with an instructor who was no good (which I found later). To add to my frustration I didn't see any difference in me. This is when I read about the South Beach Diet in Sig's 'Live to Eat' Blog. I was little hesitant to join this programme until I read about the success stories of Sig and fellow South Beach dieters. It was intriguing, then I asked myself. Can I keep up this commitment? Can I follow all the rules? Can I adapt Indian food to my diet? Then I remembered the quote above (first line of this post). So I decided to go on a South beach diet. After registering on SBD website and reading all their articles I fairly had an idea what I should do.
To me, the most important aspect of the diet is to eat what we enjoy. So I am trying to create meals that will suite my Indian tastebuds at the same time I ensure that they are healthy and meet the SBD norms. Indian style Baked Chicken is one such improvisation to the Chicken fry. Hope you enjoy this as we did.
How it tasted?
      The aroma of Indian spices filled my home and I couldn't wait to take them out of the oven. Remember I am on diet so ate a small chunk to suppress my cravings. For TH, I sauteed the onions and tomatoes with little indian spices and added the diced chicken to make a simple and quick curry for the roti. I added the small chunks to my salad and savored it as a Indian style Chicken Salad for my lunch. YUMM.

Ingredients
Chicken Breast - 1.4 lb (approx 600 grams) or 3 large breast
Lemon - 1 1/2 tbsp
Cumin Powder - 1/2 tsp
Pepper Powder - 1/2 tsp
Ginger Garlic paste - 1 tsp
Garam masala - 1/2 tsp
Paprika - 1/2 tsp
Chili Powder - 1/2 tsp (If you do not have paprika then make it 1tsp)
Salt to taste
Yogurt - 3 tsp
Canola/Olive Oil - 1-2 tsp (Optional)

Method
1. Cleaning 
Clean the chicken breast thoroughly with vinegar or turmeric powder. Pat dry to remove the excess water.
I had 3 huge chicken breasts, so I cut them in to halves. Also It was little thick so I created a small slit in the center(along the breadth). So the chicken breast looked like a (pita) pocket. This will ensure that the marinade gets in to the center of the chicken. If your chicken breast are thin, then I wouldn't suggest you to make a slit along the breadth. Instead you can create couple of .5 cm slit along the length.
2. Marinade
Add the above ingredients except chicken and mix it to a thick paste.
Take a baking tray/cookie tray and line it with a Aluminium foil. If you want you can drizzle some oil/cooking spray on the foil.
Using a brush or your hand spread the marinade to coat the chicken well. If you are creating a slit do spread the marinade inside the pocket.
Place the chicken breast in the freezer and let it marinate for atleast 2 hours or longer.
3. Baking
Preheat the oven to 400F.
Bake the chicken for 10 minutes. Remove it from oven, using a spatula flip it. Baste it with the excess liquid if any. Bake it for another 10-15 minutes or untill the chicken is cooked.
Using a spatula carefully remove them and place it on a plate. Garnish it with cilantro and serve it lemon wedges and onion (sliced into full moon). Serve it immediately as an appetizer with Green chutney or Yogurt dip.
If you are refrigerating the chicken for later use, then ensure that you reheat them on a Tawa drizzling some oil. Microwaving makes the chicken little hard and chewy.

Kadai Chicken




'I Radhika Vasanth promise to share as many side dish recipes through my blog "Food for 7 Stages of Life" effective  11/18/2009'. Wondering why this being said now? I have been receiving complains from my friends that I don't post side dish/gravies in my blog. So in an effort took keep up my word, I prepared this for our friends who visited us. They declared it as the recipe of the day and requested to publish it in my blog. To satisfy all your taste buds here is one of the most popular restaurant recipe 'Kadai Chicken'.
Ingredients from my Pantry
Oil - 2 tbsp
Cumin Seeds - 1/4 tsp
Bay Leaf - 1
Star Aniseed - 1
Red Chili - 2
Onion - 1 cup finely chopped (1 large onion, use 3-5 shallots for flavor)
Tomato -1 cup finely chopped (1 large tomato)
Turmeric Powder - 1/2 tsp
Chicken - 1/2 kg
Ginger Garlic paste - 1 1/2 tbsp
Salt to taste 
Chili Powder/Milagai Podi - 1/2 tsp (mild) to 1 1/2 tsp(extra spice)
Coriander Powder/Malli Podi - 1/2 tsp
Lemon Juice - 1 tsp (Optional)
Coriander Leaves/Cilantro - Handful 
Garam Masala (to grind): 
Cumin seeds/Jeera/Jeeragam - 1/4 tsp
Black Cumin Seeds/Karu Jeeragam/Black Jeera - 1/4 tsp
Cloves/Kirambu/Lavangam - 2
Bay Leaves/ - 1
Cinnamon/Pattai - 1 (2 cm)
Green Cardamon/Pachai Elakai - 1 (use seeds only)
Black Cardamon/Karupu Elakai - 1 (small)
Fennel Seeds/Saunf/Sombu - pinch
Pepper/Milagu - 1/2 tsp
Coriander Seeds/Malli vedhai - 1/4 tsp 
Chili Powder/Milagai Podi - 1 tsp
Coriander Powder/Malli Podi - 1/2 tsp



Cooking Instructions
Garam Masala:
    Dry roast the above ingredients until the spices start leaving its aroma. Let it cool and grind it in a mixie/blender.When is 80% done add chili powder and coriander powder and grind it to a fine powder.
Curry:
In a Kadai, pour 2 tbsp of oil. When it is hot add cumin seeds and let it splutter. Immediately add finely chopped onions and saute until it is golden brown. Add some salt to speed up the process. 
This will take 5-8 minutes. 
Add tomatoes and cover it with the lid until it becomes mushy and the onions and tomatoes blend to form a nice sauce. This will again take 5-8 minutes on a low flame. Keep an eye when it cooks, add a tablespoon of water if you think it is sticking to the kadai. 
Now add chicken and fry until it color changes or fry for for 6-7 minutes on a low flame. 
Add Ginger Garlic paste and saute for another 4-5 minutes or until it raw smell disappears. 
Add the ground Garam masala powder (that we made in the first step), chili powder, coriander powder, salt (as required) and stir. Let the masala cook and blend with chicken. It will take another 5-6 minutes for the raw masala smell to disappear Then add 5-8 tbsp of water (chicken leaves out lot of water which helps the chicken to cook well,so adjust the water accordingly ) and cover it with the lid and cook for 20-25 minutes on a low flame. Stir in between to ensure that it doesn't stick to the kadai. 
Add coriander leaves, some lemon juice (optional) and stir. Serve it with rice or rotis or even dosas.
I forgot to mention: add a tbsp of cream (optional) and coriander leaves/cilantro to garnish.

Please note that the chicken in U.S cooks super fast. I know in India it usually takes some time to cook. So adjust the timing accordingly and add more water if necessary.

A revisit to Chicken liver Pepper Fry





We decided to spend the labor day weekend at home as we were travelling to Kansas city the following weekend. Since we were home, I decided to cook an extravagant meal for my darling husband. The meal included chicken soup, biriyani, plain rice, chicken curry and my all time favorite chicken liver pepper fry. Many of us don't prefer to add the gizmos of Chicken or goat like liver, heart and lungs in our curry or fry preparations. These teeny-weenies are high in nutrients. Chicken liver is considered to be low in sodium. It is also a good source of Proteins, Vitamins (A, C, B6, B12), Minerals like copper, zinc etc., On the other side, both goat and chicken liver are high in cholesterol. 100 gm of chicken liver could have around 563 mg of cholesterol. Better avoid them if you have high cholesterol. 

I bumped into an interesting fact when I was googling about these gizmos(livers). As per a study and chinese medical belief, the goat liver is used as a remedy for Night blindness. Also, since they are rich in Vitamin B, Iron and Vitamin A pregnant women are asked to eat liver to avoid birth defects,  prevent anemia and for normal fetal growth respectively. Though it is good for the expecting Mom, they are still advised not to consume in large quantities. As too much of Vitamin A could cause some birth defects too.


You can prepare a number of dish with these gizmos. I love to add them in curry, biriyani or fry preparations. You can also exclusively prepare dishes like chicken/goat liver fry or chicken/goat liver pepper fry. I usually like the way my granny pepares the chicken/goat liver pepper fry. They are simply awesome and it goes well with rice, rotis and especially a good side for rasam. You can find the recipe of chicken liver pepper fry in one of my previous post. Recently when I was talking to my Mom she said that my dear granny doesn't add tomatoes and cumin powder in her preparation. So please avoid tomatoes and cumin powder in my recipe and use shallots/pearl onions for the authentic taste.

Chicken Fry

I should say that this is RV style Chicken fry which means that this is my own recipe. I was just thinking how it would taste if I take a piece of boneless chicken dip it in egg and fry it on a tawa. Then I thought I wouldn't like it unless it is spicy. Ok then I should marinate the chicken with spices fry it so that it cooks well from inside and then coat it with egg and fry again. This sounded good to me. Again something was missing thought why not saute some onions and bell pepper and mix the fried chicken with it and add some sauces... aah.. now I think you are good to read this recipe. Hope you find it interesting and lip smacking.
Ingredients
  • Boneless Chicken - 100 gms (8-10 small pieces)
  • Capscicum (Green, Yellow) - 1/4 cup diced
  • Onion - 1/2 diced
  • Tomato Ketchup - 2 tsp
  • Barbeque Sauce - 2 - 3 tsp
  • Soya Sauce - 2 tsp
  • Egg - 1
  • Oil - 3 tbsp
  • Salt to taste
  • Pepper - 1/8 tsp
  • Chili Powder - 2 tsp
  • Turmeric Powder - pinch
  • Coriander leaves - few sprigs
  • Green Chili - 2
  • Lemon juice - 1 tsp
  • Cumin Seeds - 1/4 tsp
Method
  • Wash and clean the chicken thoroughly. Soak it in turmeric/Salt water, this will cleanse the chicken.
  • In a bowl, add chicken, 1/2 tsp of chili powder, salt, turmeric. Mix it well, put it in the freezer and marinate it overnight or couple of hours. I marinated it overnight.
  • Next day or couple of hours later : In a kadai, add 1/2 tbsp of oil and fry the chicken until its cooked well. The texture of chicken changes and you can see few dark spots when its cooked. Keep aside.
  • Now in a small cup add egg, salt, 1/8 tsp of chili powder, 1/8 tsp of pepper poweder. Beat it well.
  • In a kadai, add 1 1/2 tbsp of oil, Soak the chicken in the egg mix and fry it or alternatively add the fried chicken and pour 2 tbsp of egg mix on top of it and fry until the egg is cooked. Keep it aside.
  • In the same kadai, add 1 tbsp of oil when it is hot add cumin seeds, wait for few seconds and then add onion and saute. Then add 2 green chili, capsicum and saute for 2-3 minutes. You should see some dark spots of capscicum. Add salt. ( for the vegies only).
  • Now add the fried chicken, barbeque sauce, tomato ketchup and soya sauce. Mix it well. We can add some chili powder if we want it more spicy. Fry it for couple of minutes until the sauce blends well with chicken and the vegies. Remove it from flame.
  • Garnish it with coriander leaves and squeeze some lime juice (around 1 tsp) before serving. Serve it hot.
Trust me the random style recipe came out really well and my hubby dear said some more please..:-)

Madurai Chicken Curry aka Kudi Amti




Hey don't get freaked out with its name. This is how we call Chicken Curry in Sourashtra. My aunt from Madurai passed on this recipe to my MOM. She makes this occassionaly and it goes great with chappati and rice. I love to have this spicy curry on a cold, rainy day. When I cooked this for my husband he was impressed and enjoyed it thoroughly with rice and rotis.
Ingredients
  • Chicken - 1/4 kg or .55 pound
  • Finely chopped Onion (size:big) - 1
  • Finely chopped Tomato(size:medium) - 1
  • Ginger - 1 inch
  • Garlic - 8 pods
  • Chilli Powder - 1 tsp
  • Turmeric Powder - 1/8 tsp
  • Oil - 3-4 tbsp
  • Water - 2 1/2 cup
  • Salt to taste
For Garam Masala (Grinding required)
  • Cloves - 5
  • Cinnamon Sticks - 2
  • Cumin Seeds - 1/4 tsp
  • Saunf / Sombu - 1/4 tsp
  • Black Cardamon - 2 ( I used green cardamon instead)
  • Whole Pepper - 1 1/4 tsp
  • Coriander / Dhaniya Powder - 1 1/2 tsp
Method

Part 1
  • Except Coriander Powder, dry roast all the Garam Masala ingredients.
  • Grind it in to slightly coarse powder and then add Coriander powder and grind it for few seconds.
  • Donot add water in this process.
Part 2
  • Grind the ginger and garlic into a fine paste. Add 3-4 tbsp of water.
Part 3
  1. In a sauce pan, heat oil.
  2. Add the chopped onions and saute until it turns golden brown.
  3. Add turmeric powder and fry it for few seconds.
  4. Add tomato, 1/4 tsp of salt and let it cook until it becomes mushy and blends nicely with the onion.
  5. Add chicken and fry it until its color changes. This should take 1 - 2 minutes (In US) / 3-5 minutes (In India).
  6. Add Ginger Garlic paste and fry it until its raw smell disappears and the oil starts leaving the pan.
  7. Add the remaining salt, chilli powder. Mix it well.
  8. Add 2 cup of water and let it cook for 5 minutes.
  9. Now add the Garam masala, remaining 1/2 cup of water and let it cook for 30 minutes on a low flame. Close the lid to lock the aromo while cooking.
  10. Remove from flame.
Garnish: Coriander leaves, curry leaves.
Serving Suggestion : Hot Rice, Rotis/Parathas

Tips :
* Add 1/4 tsp of turmeric powder or 2 tsp of vinegar while cleaning chicken. This helps to sanitize the chicken.
* Cut Chicken in small pieces. It helps the chicken to absorb masala.
* If you are in US and using pressure cooker replace the step 9. Cook on a medium flame. After 2nd whistle, reduce the flame (low) and cook for 3 minutes.
* In India, Amma replaces the 8th & 9th step as chicken takes more time to cook.
  • Add 2 cup of water and pressure cook for 10 minutes on a medium flame.
  • Add Garam masala, 1/2 -1 cup of water and pressure cook. After 1st whistle, reduce the flame and cook for 3 minutes.

Chicken Liver Pepper Fry



I feel nostaligic when I think about the Chicken or Mutton Liver fry. My maternal granny used to prepare this whenever we visited her. I shall say that my Mom n myself inherited our cooking skills from my darling granny. The recipe that I am posting today is one of my favorites and it tastes great with hot rice, rotis and as a perfect side dish with Rasam. It has a heavenly taste inspite of requiring minimal ingredients. Veggies can replace Chicken with Mushroom to make a yummy Mushroom Pepper fry. I have tried doing this using button mushrooms and it tasted awesome.



Ingredients

  • Chicken Liver - 1 lb (around 450 grams)
  • Shallots / Pearl Onions (chopped finely) - 4
  • Tomato (chopped finely) - 1/2 (optional)
  • Ginger Garlic Paste - 1 1/2 tsp
  • Pepper Powder - 2 tsp
  • Cumin Powder - 1 1/4 tsp (optional)
  • Chili Powder - 1 - 1 1/2 tsp
  • Turmeric Powder - 1 pinch
  • Cumin Seeds - 1/8 tsp
  • Salt to taste
  • Oil - 1 1/2 tbsp
  • Cilantro / Coriander leaves - for garnishing
  • Water
We prefer to use shallots over the regular onions as it gives a great flavour and its much healthier than its big brother. Shallots play a vital role in this dish as it gives a nice
flavour to this spicy dish.

Method

  • Wash Chicken Liver. Add turmeric powder and soak it for couple of minutes. This helps to sanitize the chicken. You can also add vinegar. Drain the water and leave them on a kitchen towel.
  • Add 1 1/2 tbsp of oil in a pan, when it is hot add cumin seeds and fry it for few seconds.
  • Add chopped onions and saute it for a while.
  • Add turmeric powder and let it blend with the onions.
  • Before it turns golden brown add the chopped tomatoes and toss them for a minute or until it softens.  [optional]
  • Sprinkling salt at this stage helps the dish to cook fast.
  • Add 1 1/2 tsp of ginger garlic paste and mix it well until the raw smell disappears. (It is very important to do this to have a great flavor in your dish. This is applicable for any dish that uses ginger garlic paste.)
  • This would take a minute or so and then add chicken liver cut in small cubes (3 x 3 cm). Mix and toss it until the color changes (2 minutes approximately).
  • Add chili powder, pepper powder, cumin powder(optional), salt. Mix it with the chicken liver.
  • Add 4 tbsp of water and let it cook until the water evaporates.
  • Keep tossing until you see the oil leaving the pan (in small amount).
  • Garnish with cilantro/coriander leaves & serve it with hot rice.
P.S: 
Dear Grandma does not use tomato or cumin powder in her preparation. So avoid those two ingredients for an authentic grandma recipe.  

Add or reduce pepper powder according to your taste buds. Using freshly ground ginger garlic paste, pepper and cumin powder adds to it taste. You can also use Mutton liver instead of Chicken liver. I have also added chicken heart and lungs to my dish as the box which I bought had all of them.
