Pineapple Sadam / Annachi pazha Sadam


I am so obsessed with Pineapple Rice that I came up with another recipe. You can find my previous version of Pineapple Rice here. This one is pretty much close to what I had in my cousin's wedding. Hope you relish it as I did :)

Ingredients from my Pantry
Basmati Rice - 1 cup (You can also use Sona Masori/Raw/Boiled Rice)
Pineapple chopped - 1 cup ( 1 x 1.5 cm) , you might need 3 round slices for 1 cup (peel the skin and remove the thorn like stuff)
Onion - 1 1/2 tbsp chopped or 1/4 of a small onion
Green Chili - 5
Ginger/Inji - 1/2 tsp chopped
Salt to taste
Oil - 2 tbsp
Mustard Seeds/Kadugu - pinch
Cumin Seeds/Jeera/Jeeragam - pinch
Asafoetida/Hing/Perungayam - pinch
Turmeric Powder/Manjal Podi - 3 pinch
Curry Leaves/Karuveipilai/Karuveipaku - 4

Cooking Instructions
Cook Rice:
Boil the rice in a rice cooker/pressure cooker until it is 90% done (usually 2 or 3 whistles in a pressure cooker). You will need 1 - 1 1/4 cup of water to cook the rice.
or
You can also add 8-10 cup of water, add rice and boil it until it is 90% cooked. Drain the water using a strainer/sieve/conventional method. 
Pineapple mix: 

In a pan, add oil. When it hot, add mustard seeds and let it splutter. Add cumin seeds, hing, curry leaves, green chili, turmeric powder and saute for few seconds. 

Add chopped onions and saute for 2 minutes on a medium flame. 
Add pineapple, 1 tbsp of water and cook for 5 minutes on a low flame. Crush the pineapple slightly as you cook. 
P.S: Reduce green chili's if it is prepared for kids or if you want the dish to be mildly spiced.
Mixing it with Rice:

Add atleast 2 cup of boiled rice and mix it with the sauce (Just like how you make lemon rice or puliyogare)
Let it stay for a while and then serve. This allows the rice to absorb the flavor of pineapple.

Raw Mango Rice / Mangai Sadam






Ingredients
(Serves 2)


Raw Mango (Small) - 1/2 finely chopped or grated
Onion(Small) - 1/2
Green Chili - 6
Olive Oil or Gingerly Oil - 2 tbsp
Basmati Rice - 2 cup (Cooked)
Mustard Seeds - 1/4 tsp
Cumin seeds / Jeera - 1/4 tsp
Urad dhal - 1 1/2 tsp
Chana dhal - 1 1/2 tsp
Hing / Asafoetida / Perungayam - 1/8 tsp
Mustard powder - 1 tsp
Turmeric powder - pinch
Salt to taste
Curry leaves - few


Method


Add oil in a large pan, when it is hot temper it with mustard seeds, cumin seeds and curry leaves. Wait until all the mustard seeds splutter. Then add chana dhal, urad dhal, hing, when the color of dhal changes add onion , green chili and fry it for a while. As you saute you should be able to get a wonderful aroma of hing and other ingredients. Now add turmeric powder, saute. Now add the finely chopped or grated raw mango, saute for couple of minutes until. Add salt and on a low flame gradually add rice and mix it well until the rice blends nicely with the paste. Add mustard powder, mix it well and serve.


Tips : You can also add salt while boiling rice.
If you think the boiled rice is sticky spread it in a large plate add some oil preferably gingerly oil and mix.
It is not mandatory to used Olive or Gingerly oil, you can alternate with any oil of your choice.
The skin can be peeled off before grating or chopping.

Brinjal Rice / Vangi Bath



Today I thought I should post a recipe on Brinjal (eggplant), the king of vegetables. I think brinjal is one of the few vegetables that is liked by most of them. Even GOD might love this vegetable.
I just love them in any form. I learnt this recipe from one of my friend, I liked it so much because it tastes like biriyani and it is so easy and fast to cook.

Ingredients
(Serves 2)
  • Brinjal - 4 (Sliced)
  • Basmati Rice (90% Cooked) - 2 cups
  • Ginger Garlic Paste - 2 tsp
  • Onion (size:small) - 1 (Sliced)
  • Tomato (size:small) - 1 (chopped)
  • Curry leaves - 2 or 3
  • Garam Masala Powder - 1 1/2 tsp
  • Chili Powder - 1 tsp (can make it 1 1/2 tsp if you like it spicy)
  • Turmeric Powder - pinch
  • Oil - 4 tbsp
  • Salt to taste
Method
  • Add Oil, Ginger Garlic paste. Fry until the raw smell disappears.
  • Add Garam Masala. Fry it for a 20 seconds.
  • Add Onions, Curry leaves and fry it until the color changes.
  • Add Turmeric powder and blend it nicely with the onions.
  • Add Chili Powder and Salt. Mix it with the onions.
  • Now add tomato and saute until its blanched.
  • Add sliced brinjal.
  • Add 2-3 tbsp of water if the mixture sticks to the pan (optional)
  • Let the brinjal cook until it becomes soft and mushy.
  • On a low flame, add the boiled rice and mix it well.
  • Remove from flame.
Garnish : Add coriander leaves, fried onions.
Serving Suggestion : Serve it hot with Raitha.

Hot n Sweet Pineapple Rice

My cousin's wedding was celebrated very grandly with an extravagant feast. I had Pineapple Rice for the first time in her wedding. When I tasted it I couldn't really find out what I was eating though the taste was very familiar to me. It was very different but it tasted awesome. I took my uncle's help to find out what was that. He said its Pineapple rice. It all happened an year and half back.


My hubby likes pineapple in any form. I thought I should try this recipe myself and delight him. I didn't know where to start and had no clue about its ingredients. All I remembered was the pineapple flavor. I thought I should give it a shot. My first two attempts didn't impress me much though my hubby liked it :-) So this time I decided that I should get it right. Atlast I succeeded in making a Hot n Sweet Pineapple rice. Though its a different version from what I had, we enjoyed it thoroughly. I hope you too enjoy this...




Ingredients
  • Pineapple (Cut it in small cubes) - 3/4 cup
  • Pineapple Juice - 8 tbsp
  • Medium sized Onion (Sliced) - 1/2
  • Green chilli - 3 for Spicy / 2 for Medium Spice / 1 for Mild Spice
  • Turmeric Powder - 1 pinch
  • Garam Masala - 1/8 tsp [optional]
  • Cloves - 3
  • Cinnamon Stick - 1 (small in size)
  • Cumin seeds - 1/8 tsp
  • Basmati Rice (90% Cooked) - 1 1/2 cup
  • Oil - 1 3/4 tbsp
  • Salt to taste
For Garnishing
  • Cilantro leaves (chopped) - 1/2 tsp
  • Badam (Sliced) - 2





Method

  • Heat oil in a pan/skillet 0n a Medium flame. Add cumin seeds, cloves and cinnamon stick. Fry it for 15-20 seconds.
  • Add half portion of cut onions and fry it until golden brown.
  • Add a pinch of turmeric powder.
  • Add green chillies and pineapple pieces. Fry it for 30-40 seconds. Now add the pineapple juice and mix it well. I prepared the juice at home.
  • After 30 seconds, add garam masala and salt. Mix it and the sauce is ready.
  • Now add rice and mix it with the sauce on a low flame ensuring that rice does not stick to the pan. Also take care not to break the rice while mixing. Remove it from flame.
Optional
  • In another kadai, add 1/4 cup of oil. After 1 minute add the other portion of onion and fry it until golden brown. Add it to the pineapple rice and mix it well. You can keep a part of it for garnishing. Fried onions gives a great flavor to the rice.
  • Garnish it with cilantro leaves and badam slices.
Tips

  • Cut pineapple into small cubes ( 2 x 2 cm). Smaller the better as it blends well with the rice.
  • You can even replace the whole garam masalas with 1/2 tsp each of urad dhal and channa dhal. It gives a different flavor alltogether.

  • Use home made pineapple juice.
